When the recipe first came out, it was the blogging community who took the bread to new heights, especially Rose Levy Beranbaum, author of The Bread Bible. I followed Rose's experiments through the weeks and learned from her recipe adjustments and the why's of how this bread works.&lt;/em&gt;&lt;br /&gt;				&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='font-family:Times New Roman; font-size:12pt'&gt;Yield: one 1 lb loaf&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='font-family:Times New Roman; font-size:12pt'&gt;3 cups bread flour (I like Harvest King bread flour)&lt;br/&gt;1/4 teaspoon instant yeast&lt;br/&gt;3/4 tablespoon kosher salt (or 1 teaspoon table salt)&lt;br/&gt;1 1/2 cups warm water&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='font-family:Times New Roman; font-size:12pt'&gt;Covered pot (five-quart or larger cast iron, Pyrex, ceramic, enamel…something that can go into a 450F oven.)&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='font-family:Times New Roman; font-size:12pt'&gt;1. Mix dough: The night before, combine all ingredients in a big bowl with a wooden spoon until the dough just comes together. It will be a shaggy, doughy mess. Cover with plastic wrap and let sit 12-20 hours on countertop.&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='font-family:Times New Roman; font-size:12pt'&gt;2. Shape &amp;amp; preheat: The dough will now be wet, sticky and bubbly. With a wet spatula, dump the dough on a floured surface. Fold ends of dough over a few times with the spatula and nudge it into a ball shape. You can use your hands if you like, just keep your hands wet so that the dough does not stick. Generously dust a cotton towel (not terrycloth) with flour. Set dough seam side down on top of towel. Fold towel over the dough. Let it nap for 2 hours. When you've got about a half hour left, slip your covered pot into the oven and preheat to 450F.&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='font-family:Times New Roman; font-size:12pt'&gt;3. Bake: Your dough should have doubled in size. Remove pot from oven.  Holding towel, dump wobbly dough into pot. Doesn't matter which way it lands. Shake to even dough out. Cover. Bake 30 minutes. Uncover, bake another 15-20 minutes or until the crust is beautifully golden and middle of loaf is 210F. Remove and let cool on wired rack. If not eating right away, you can re-crisp crust in 350F oven for 10 minutes. Best way to eat it? Smear a warm slice with some good butter (Kerrygold and Lurpac are both found in your grocery stores, usually on top shelf)&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='font-family:Times New Roman; font-size:12pt'&gt;***&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;br /&gt; &lt;/p&gt;&lt;p&gt;&lt;br /&gt; &lt;/p&gt;&lt;p&gt;&lt;br /&gt; &lt;/p&gt;&lt;p&gt;&lt;br /&gt; &lt;/p&gt;&lt;p&gt;&lt;br /&gt; &lt;/p&gt;&lt;p&gt;&lt;br /&gt; &lt;/p&gt;&lt;h1&gt;German Oven Pancakes&lt;br /&gt;&lt;/h1&gt;&lt;p&gt;1/2 cup of all-purpose flour, sifted&lt;br /&gt;&lt;/p&gt;&lt;p&gt;3 eggs, lightly beaten&lt;br /&gt;&lt;/p&gt;&lt;p&gt;1/2 cup milk&lt;br /&gt;&lt;/p&gt;&lt;p&gt;2 tablespoons melted butter&lt;br /&gt;&lt;/p&gt;&lt;p&gt;1 tablespoon sugar&lt;br /&gt;&lt;/p&gt;&lt;p&gt;1/4 teaspoon of salt&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Preheat oven to 450F. If you have a convection oven, set it at 425F - the pancakes rise even higher on the convection setting.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Lightly beat eggs in a large bowl. Stir in the milk, melted butter, salt and sugar. Gradually add flour to egg mixture, a spoonful at a time. Have your child help you by spooning the flour in while you whisk by hand. Make sure the flour is well incorporated in the batter with no lumps, but do not over-mix, as you want to keep the pancake light.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Lightly spray a 9″-11″ oven-safe skillet with cooking spray. Pour batter in the skillet. Bake 12-18 minutes, just until the edges are golden. Check your pancake at the 12 minute mark. It's fun to turn on the oven light and watch the pancake form!&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Note: Try experimenting with different pans and skillets - just as long as you use something at least 9″ wide and oven-safe. You could also divide the batter into two smaller pans and have them bake side by side and see which one rises higher. Just make sure that your oven rack is in the middle position or lower. Top with fruit granola, yogurt, powdered sugar, syrup, toasted almonds or fruit butters. That's a decent substitute, although not quite as light. You also might need to add a touch more buttermilk to get the right consistency.&lt;br/&gt;&lt;br/&gt;Nonstick cooking spray&lt;br/&gt;2 cups Southern self-rising flour, such as White Lily&lt;br/&gt;½ tsp. salt&lt;br/&gt;¼ cup granulated sugar&lt;br/&gt;¼ cup vegetable shortening&lt;br/&gt;2/3 cup heavy cream&lt;br/&gt;1 cup well-shaken buttermilk&lt;br/&gt;1 cup all-purpose flour, for shaping biscuits (&lt;em&gt;do not&lt;/em&gt; use self-rising for this)&lt;br/&gt;2 Tbsp. unsalted butter, melted&lt;br/&gt;&lt;br/&gt;Preheat the oven to 475 degrees Fahrenheit, and spray an 8" round cake pan with cooking spray.&lt;br/&gt;&lt;br/&gt;In a medium bowl, combine the self-rising flour, salt, and sugar and whisk to mix well. Add the shortening and, using your fingers, rub it into the flour mixture until there are no lumps bigger than a large pea.&lt;br/&gt;&lt;br/&gt;Stir in the heavy cream and buttermilk, taking care not to over mix. Let stand for 2-3 minutes. The dough will be very wet, resembling large-curd cottage cheese.&lt;br/&gt;&lt;br/&gt;Pour the all-purpose flour into a shallow bowl or pie plate. Rub your hands in the flour to dust them well. Using a ¼-cup measuring scoop or something of similar size, spoon a lump of wet dough into the flour, and sprinkle some flour over it to coat well. Gently pick it up and shape it into a soft round. I do this by cradling it in the cupped palm of one hand and gently shaking it, letting the excess flour fall through my fingers. You can also toss the dough softly - very softly - back and forth from cupped palm to cupped palm: it should feel similar to a water balloon. Place biscuit in pan and repeat with remaining dough, pushing biscuits tightly against one another so that they will rise up and not spread out.&lt;br/&gt;&lt;br/&gt;Brush with melted butter and bake until set and lightly browned, 15-20 minutes. Layer the meats down the center of the rectangle, leaving a 1-inch border on either end. Fold 1 side of the dough over the filling, lengthwise. Then, fold the other 1/2 over and press the seal the filling inside. Take 1 egg yolk, and beat lightly with a fork. Brush the egg yolk over the top of the dough. The yolk will act as the glue to hold. Fold the dough in 1/2 again lengthwise. Pinch the seam with your fingers to seal. Press the outside of the dough to make sure everything is sealed tight and to make an even thickness for the body of your snake. Taper 1 end of the dough to form a tail shape. Tomato sauce, on the other hand, is a more complex affair, starting with puréed tomatoes and seasoned with onion, carrot, celery, and bay leaf, and left to simmer until thickened and rich in flavor. &lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='font-family:Times New Roman; font-size:12pt'&gt;Make this sauce with fresh tomatoes only when the juiciest, most flavorful ripe tomatoes are available. (You can also do this in a food processor; just be sure not to over mix.) &lt;br /&gt;&lt;/p&gt;&lt;p&gt;&lt;br /&gt; &lt;/p&gt;&lt;h2&gt;Scones &lt;br /&gt;&lt;/h2&gt;&lt;p&gt;1 recipe of multi-purpose baking Mix&lt;br /&gt;&lt;/p&gt;&lt;p&gt;1 Tablespoon grated lemon zest or orange zest&lt;br /&gt;&lt;/p&gt;&lt;p&gt;1 cup fresh blueberries or cranberries, or ½ cup dried fruit like cranberries, apricots or a combo of fruit and nuts.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;1 large egg&lt;br /&gt;&lt;/p&gt;&lt;p&gt;1 ¼ cups buttermilk; more for brushing&lt;br /&gt;&lt;/p&gt;&lt;p&gt;3 Tablespoons sugar; more for sprinkling&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Heat the oven to 375&lt;span style='font-family:Times New Roman'&gt;◦&lt;/span&gt;F. In a bowl, combine the Baking Mix with the zest and the chosen berries or whatever. Break the egg into the buttermilk and stir with a fork; add the sugar and stir briefly to combine. Make a shallow well in the dry mix and pour in the wet ingredients. With as few strokes as possible, stir until the mixture in just combines. It should be loose, but if it doesn't hold together at all, add more buttermilk 1 Tablespoon at a time.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Generously flour a counter and turn the dough out onto it; it will be shaggy and very soft. Scrape any bits in the bowl onto the mound of dough. Flour your hands. Shape the mixture into a very loose rectangle with the short side nearest you.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;With a sharp knife, cut the rounds into six wedges each. Brush the tops with buttermilk and sprinkle them with sugar. Bake for 10 minutes at 400 degrees until brown. Let cool. Mix next 5 ingredients together. Spread on cooled crust then sprinkle shredded vegetables as desired. Be careful not to over-process, or the salsa will end up mushy. Add the cilantro, chili pepper (with or without seeds), lime zest, lime juice, tomatoes and hot sauce. Pulse until the salsa reaches the consistency of a thick puree. Be sure to leave in some chunks, too. It makes it look more homemade. Taste and season with salt and pepper.&lt;br/&gt;&lt;br/&gt;Serve this salsa with tortilla chips or your favorite Mexican food or store in an air-tight container for up to one week.&lt;br/&gt;&lt;br/&gt;Serves 16.&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;br /&gt; &lt;/p&gt;&lt;p&gt;&lt;br /&gt; &lt;/p&gt;&lt;p&gt;&lt;span style='color:black; font-family:Times New Roman; font-size:13pt'&gt;&lt;strong&gt;HOMEMADE TORTILLA CHIPS&lt;br /&gt;&lt;/strong&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;br /&gt; &lt;/p&gt;&lt;p&gt;&lt;span style='color:black; font-family:Times New Roman; font-size:12pt'&gt;1 pkg. corn or flour tortillas (corn are lower in fat than flour)&lt;br/&gt;cumin seasoning&lt;br/&gt;Lite salt&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='color:black; font-family:Times New Roman; font-size:12pt'&gt;Cut stack of tortillas into 8 wedges each. Spread wedges in a single layer on baking sheet. Sprinkle with cumin and lite salt. Bake at 375 degrees about 10 minutes, turning after 5 minutes. Make sure you watch them closely. You do not want them too brown. Store in an air tight container. When serving, freshen the chips in the microwave about 45 seconds to 1 minute. A tasty, low fat, low salt alternative.&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;br /&gt; &lt;/p&gt;&lt;p&gt;&lt;br /&gt; &lt;/p&gt;&lt;p&gt;&lt;span style='color:black; font-family:Times New Roman; font-size:13pt'&gt;&lt;strong&gt;HEARTY VEGETABLE SOUP&lt;br /&gt;&lt;/strong&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;br /&gt; &lt;/p&gt;&lt;p&gt;&lt;span style='color:black; font-family:Times New Roman; font-size:12pt'&gt;1 can vegetable stock (14oz)&lt;br/&gt;1 can tomato puree (29oz)&lt;br/&gt;1 can tomato paste (6oz)&lt;br/&gt;8 cups water&lt;br/&gt;1 large carrot, medium dice&lt;br/&gt;2 stalks celery, medium dice&lt;br/&gt;2 red-skin potatoes, medium dice&lt;br/&gt;1 1/2 cups broccoli crowns&lt;br/&gt;8 button mushrooms, diced&lt;br/&gt;1 tablespoon black mustard seeds&lt;br/&gt;4 pinches ground black mustard&lt;br/&gt;2 teaspoons fine sea salt&lt;br/&gt;1 teaspoon garlic powder&lt;br/&gt;2 tablespoons onion powder&lt;br/&gt;1 1/2 tablespoons ground coriander&lt;br/&gt;3 tablespoons chopped parsley&lt;br/&gt;2 tablespoons dried thyme leaves&lt;br/&gt;3 tablespoons dried basil leaves&lt;br/&gt;3 tablespoons dried oregano&lt;br/&gt;4 dashes ground black pepper&lt;br/&gt;6 handfuls pasta of choice (rottini, fusil, ziti, noodles)&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='color:black; font-family:Times New Roman; font-size:12pt'&gt;This is a low cholesterol and no concentrated sugars soup - Heart Healthy!&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='color:black; font-family:Times New Roman; font-size:12pt'&gt;In a large saucepan or stockpot, add vegetable stock and water and bring to a boil. Add diced carrots (hard vegetables) and full-boil for 5 minutes. Stir in Tomato Puree and Paste. Allowing to rolling boil for another 5 minutes. This begins softening the carrots.&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='color:black; font-family:Times New Roman; font-size:12pt'&gt;Add all other fresh vegetables and simmer, covered, for 5 minutes. Then add the herbs &amp;amp; spices, stirring them in.&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='color:black; font-family:Times New Roman; font-size:12pt'&gt;Simmer this for 30 minutes, partially covered. Stir in the pasta and simmer, partially covered, for another 10 minutes.&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='color:black; font-family:Times New Roman; font-size:12pt'&gt;Test the softness of the carrots – if they still have just a little crunch, the soup is done. Add more simmer time if not.&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='color:black; font-family:Times New Roman; font-size:12pt'&gt;Allow the soup to cool before serving (this allows the flavors to work together as it cools). Serve warm.&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='color:black; font-family:Times New Roman; font-size:12pt'&gt;Makes about 1 gallon of soup. Add olive oil to a large saute pan over moderate heat. Add minced ingredients and saute until onions are limp. Transfer to larger pot. Add plum tomatoes and break them down with a fork into little chunks. Add tomato sauce; turn heat to high and bring to boil.&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='color:black; font-family:Times New Roman; font-size:12pt'&gt;As it comes to a boil, add basil, parsley, oregano, salt, red pepper, black pepper, and half the Parmesan cheese. Stir vigorously until ingredients start to boil. Let it boil for about 2 minutes, then let it cook, over low moderate heat (just above a simmer) for 45 minutes, uncovered, stirring occasionally.At end of 45 minutes, add rest of cheese; stir vigorously. Cover and let cook over the same heat for 45 more minutes, stirring occasionally.&lt;br /&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='color:black; font-family:Times New Roman; font-size:12pt'&gt;You can use it right away to grace your favorite pasta or even as a sauce for fish or topping for a baked potato. If you don't use right away, store it, covered, in the refrigerator. If it gets too thick, simply water to it when you reheat it. Return to a boil; add dumplings. Boil 3 minutes; serve.&lt;br /&gt;Tip: Use a microplane to finely grate the ginger.&lt;br /&gt;Note: Roster sauce (or Sriracha, pronounced SEE-RAH-CHAH) is a Thai-type hot sauce. It’s a sweet, hot, spicy mix of chili peppers, vinegar, garlic, sugar and salt.&lt;br /&gt;&lt;br /&gt;6 cups of chicken broth ( or vegetable for the shrimp and beef for the pork)&lt;br /&gt;½ head Napa cabbage, thinly sliced&lt;br /&gt;2 cups sliced mushrooms&lt;br /&gt;1 tablespoon finely grated fresh ginger&lt;br /&gt;1 tablespoon soy sauce&lt;br /&gt;¼ to ½ teaspoon crushed red pepper flakes, or to taste&lt;br /&gt;½ cup frozen peas or any other vegetable—or leave it out&lt;br /&gt;3 green onions, thinly sliced&lt;br /&gt;1-16 ounce package frozen pot stickers—chicken, pork or shrimp&lt;br /&gt;1 cup cooked chicken, diced ( or 1 cup cooked shrimp, roughly chopped or 1 cup pulled pork)&lt;br /&gt;1 teaspoon sesame oil&lt;br /&gt;Dash of Rooster Sauce—1/8 to ¼ teaspoon&lt;br /&gt;&lt;br /&gt;Bring chicken broth to a boil in a large soup pot.
